Temporarily Unavailable...  The Pigeon Pea originally hails from Africa and is now widely used throughout the Caribbean. This brown, oval bean is called a pea due to its small size and shape. The Pigeon Pea is about ¼ inch round, tan in color with light brown speckles. Blessed with a pungent flavor and mealy texture, it fades when cooked. Also known as Toor Dal, Caja Pea, Congo Pea, and Goongoo Pea, the Pigeon Pea is very popular in the southern states of the U.S. Often paired with rice this Pea can be used anywhere you normally use Black-eyed Peas or Kidney Beans.

Pigeon Peas. 

Pigeon Peas can be served combined with vegetables such as carrots and cauliflower. Pigeon Peas are popular in pea soup with dumplings and beef or in the familiar pea and ham soup. Used in the Bahamas as a favorite in Pigeon Peas and rice with onions, celery, and tomatoes, all perfectly spiced. The slow cooking nature of these beans allows for a rich, savory broth to be created.

Recommended Preparation Instructions:

Soak overnight.  Rinse and place in a large pot and cover with fresh water.  Bring water to a boil for 3 minutes, reduce heat and simmer, covered, until tender.  The tough skins require a long cooking time. 

One cup dry yields 3 cups cooked.
