Cooking Calypso Beans is large quantities of water help keep them from losing their distinctive coloring. Calypso Beans can be combined with rice to make a unique stuffing for vegetables. Excellent in Poblano stew or bean salad with mango and citrus. Soak overnight; 1 cup dry equals 2 ¼ cups cooked.
Recommended Preparation Instructions:
Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring water to a boil for 3 minutes, reduce heat and simmer, covered, for 60-90 minutes until tender.
One cup dry yields 2½ cups cooked.
