This Lima Bean is traditionally known for its use in Succotash, a dish that was enjoyed by the Native Americans. Mildly flavored and extremely large, about an inch in length, it is similar to the ever-popular Christmas Lima. Thinner in width and cream-colored, the Giant Peruvian Lima Bean is referred to as butter, curry, lab, or pole beans. The creamy texture of the Giant Peruvian Lima Bean makes it a hearty and tasty addition in warm or cold salads. Toss cooked Peruvian Lima Beans lightly with ground black peppercorns and butter. Puree-cooked Peruvian Lima Beans with spices and mix with yogurt or sour cream for a tasty dip.

Recommended Preparation Instructions:
Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring to a boil for 3 minutes, reduce heat and simmer, uncovered, for about 2 hours until tender. This bean produces foam, so skim the water regularly.
One cup dry yields 2¼ cups cooked.
