The Pasilla (Pa-see-ya) Negro is a traditional chile used in both Southwestern and American dishes. Long, black, slightly bent and wrinkled, this flat chile measures about 6 inches long and 1 ½ inch wide. Richly colored like an Eggplant or a Raisin, this thin-fleshed chile has an offbeat berry flavor with herbaceous tones. The word Pasilla comes from the word "PASA" meaning "little raisin" in Spanish. Pasilla Negros, combined with the Ancho and Guajillo, form the "holy trinity" of chiles used to prepare the traditional mole sauces. In California, the Ancho Chile is called Pasilla. Scoville heat units are 1,000-4,000.
