Description:

Salty, smoky, and distinctive, Prague Powder #1, or Insta Cure No. 1, is a basic pink curing salt used to cure all meats that require cooking, smoking, or canning. This includes poultry, fish, ham, bacon, luncheon meats, corned beef, pates, and more. It is used in the curing process to prevent bacteria growth and to provide the characteristic flavor and red color associated with curing. Prague Powder #1 is recommended for meats that require short cures and will be cooked and eaten relatively quickly, like sausages. It is not appropriate for long cured products like hard salami. Prague Powder is only meant to be used in very small quantities. That's why it's colored pink to prevent it from being mistaken for ordinary salt.

Recommended Preparation Instructions:

Recommended usage for curing is 1.1g per 500g of meat. Only 1 ounce of Prague Powder is necessary to cure 25 pounds of sausage and 4 ounces will cure 100 pounds. To cure meat or fish correctly and within food safely guidelines, it is extremely important to use the proper amount. Too much or too little can adversely affect health, taste, and food quality.
