Description:
Soba is the Japanese name for Buckwheat. Soba Noodles are a thin noodle made from Buckwheat. Because noodles made out of pure buckwheat can easily fall apart when boiled, the buckwheat flour is usually mixed with binders, most often wheat flour. The art of creating fresh Soba Noodles is an impressive artisan activity. Old fashioned milling techniques are used to conserve the delicate flavors of the noodles that would be lost using contemporary techniques. Soba noodles, because of their buckwheat content, are a slow-releasing carbohydrate and have high protein content. Soba Noodles are made with Buckwheat flour, Wheat flour, water, and salt. When cooked Soba Noodles are pale and translucent beige with a slightly chewy texture. Soba noodles can be served drained and chilled or hot in a soy-based broth. Traditionally eaten on New Years' Eve in Japan, Soba was at one time offered as a “housewarming gift” to new families in a neighborhood.

Soba Noodles are a delicate bed for steamed vegetables. Soba Noodles can be used in soups, salads, with braised dishes or alone with a light sauce. Some unique and creative dishes using Soba Noodles are; Chinese chicken salad, wild mushrooms, and Soba Noodles, Soba, shrimp and cucumber salad, broccoli stir-fry with Soba Noodles, Soba Noodles with Squash, Smoked Tofu and Basil, Char Grilled Prawn Kebabs with Soba Noodles and soy dipping sauce.
Recommended Preparation Instructions:
To prepare noodles, scatter into plenty of boiling water and cook for about 4-5 minutes until noodles reach desired tenderness. Strain noodles into a colander and rinse 2-3 times under cold running water. Drain well.
