SPICY BLACK BEAN SPREAD
  • 1 1/2 cups of cooked black beans
  • 3 Tbsp hot salsa
  • 3 green onions, chopped fine
  • 2 cloves of garlic, minced
  • 1/2 cup cottage cheese
  • 2 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. hot sauce
  • salt and pepper to taste

Combine the black beans, salsa, green onions, garlic, cottage cheese, hot sauce, cumin, coriander, salt, and pepper in electric blender, and then blend until smooth.  Add just a bit of water if needed to blend mixture thoroughly.  Great for dipping vegetables or use as a spread for sandwiches. 

Makes 12 servings.
