FRIED RICE WITH MUSHROOMS AND ALMONDS

 

Sauté onions in 1 Tbsp. oil until brown; set aside.  With remaining oil, sauté raisins until crisp; set aside.  Melt 2 Tbsp. Butter and sauté mushrooms for 3-4 minutes.  Add seasoning. Cover and simmer for 5 minutes.  Melt remaining butter in a saucepan, add rice and heat thoroughly.  Stir in onions, raisins, mushrooms and almonds.  Season with salt and pepper to taste.
