Crumble sausages into heavy sauté pan over medium heat. Stir in onions, garlic and parsley and sauté, stirring frequently, for about 15 minutes or until sausage is cooked. Add white wine and tomatoes and cook for about 30 minutes or until sauce is well flavored. Add salt and pepper.
Cook pasta in rapidly boiling water according to package directions for al dente. When done, drain well. Return to pot and stir in sausage mixture, beans and bitter greens. Return to heat to warm through. Serve with grated Parmesan cheese. Serves 6.
