Prepare rice per package directions.
While rice is cooking, in skillet, melt butter and sauté the red onion with the red, orange and yellow bell peppers until tender. Remove from heat.
Set up four large, shallow bowls and place ruffled lettuce along half of the edge of each bowl. Place a large spoonful or two of rice against the lettuce and then add equal portions of chicken strips, olives, and avocados. Top with your favorite toppings to create a delicious wild rice grain bowl.
