Rice River Farms Wild Rice Savory Quiche
  • 10 oz package of Rice River Farms Kaleidoscope Blend, prepared per package directions
  • 1 pie crust of choice
  • 2 tbs butter
  • 1 large onion, thinly sliced
  • ½ cup mushrooms, chopped small
  • 4 garlic cloves, diced
  • 4 bacon strips, fried crisp
  • 1 tbs Dijon mustard
  • 3 eggs slightly beaten
  • ¾ cup milk
  • ½ cup shredded Italian cheese blend
  • ¾ cup parmesan cheese
  • Prepare rice blend per package directions. You will only use approximately 1 cup of cooked rice per quiche.

    Melt butter in skillet, sauté onions, mushrooms and garlic until tender.  Add cooked bacon and rice and toss together. Place crust in bottom of deep pie plate and layer the bacon and rice mixture on the bottom of the crust.

    Mix together the milk, eggs, mustard, and ¼ cup of the parmesan cheese along with some salt and pepper.  Pour into the pie plate over the ingredients on the bottom. Top with remaining cheese and bake at  and bake at 350° for about 35 to 45 minutes or until middle is set. Remove from oven, edges will be brown. Let set for 5 minutes then cut and serve.

    Makes 6 servings.
