Description:

The flavor of Cumin plays a large part in Indian, Mid-Eastern, North African, and Mexican cooking. Cumin is a seed from a low-growing bush that grows to about one to two feet tall. The seeds are 1/8-1/4 inches long with a striped pattern and are brown in color. The seeds are boat-shaped, tapering at each end, with tiny stalks attached. Similar in looks to Caraway seeds, Cumin seeds are lighter and their flavor is strong, warm, and slightly bitter. A great source of Iron, Cumin has been used medicinally as a diuretic, carminative, stimulant, astringent, and antispasmodic. Ancient lore cited that Cumin kept chickens and lovers from wandering. Cumin is used in many ethnic cuisines and is a critical ingredient of chili powder. Also found in Achiote blends, garam masala, curry powder, and baharat. Ground Cumin is stronger than whole seeds and is used mainly where highly spiced foods are preferred.

Heat with butter or olive oil and drizzle over cooked vegetables or potatoes. For a bit of a bite, add Cumin to your stir-fry or rice pilafs. Try Cumin in chile con carne, enchiladas, sausage, cheese, and chutneys. Toss some Cumin into your favorite cornmeal muffin recipe or use it as a pickling ingredient for cabbage and sauerkraut. Accent your fish dishes, stews, couscous, and vegetables.

Recommended Preparation Instructions:

Cumin is best when ground immediately prior to use. To grind, use a pepper mill, electric spice grinder, or mortar and pestle. Store Leftover Ground Cumin in an airtight glass jar.
