WINTER WILD RICE SALAD
2 cups cooked
Wild Rice
(cooked with
Chicken Seasoning
)
2 cups broccoli florets, blanched
1 cup chopped red bell pepper
4 scallions
1/2 cup
dried diced apricots
1/2 cup
dried cranberries
1/2 cup toasted slivered almonds
Dressing
3 Tbsp. rice vinegar
3 Tbsp. extra virgin olive oil
1/4 tsp.
cumin
salt and
pepper
to taste
Mix all ingredients in a bowl, add dressing and toss until evenly coated then chill.
