Vibrantly colored and tasty as well, Jacobs Cattle beans are an Heirloom bean related to the Kidney bean. These brightly patterned bean seeds were handed down within a small community for several generations. Jacobs Cattle beans are slim, shiny, and white with splashes of deep maroon; resembling the hide of spotted Hereford cattle. The bean is about 5/8" long, with a plump kidney shape, earthy flavor, and sweet, mealy texture. Renowned for its baking qualities, Jacobs Cattle beans are good in salads or on their own as a side dish. This bean may also be referred to as a Trout Bean, Dalmatian bean, and Torellen. Jacobs Cattle can be substituted for any bean in the haricot family.

Commonly used in baked bean dishes, they are delicious served in stews, casseroles, and soups. Simply tossing the cooked beans with olive oil, balsamic vinegar and fresh herbs makes a flavorful dish or salad.

Recommended Preparation Instructions:

Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring to a boil for 3 minutes, reduce heat and simmer, covered, for 60-90 minutes until tender. This bean produces foam, so skim the water regularly.

One cup dry yields 2¾ cups cooked.
