Common in Italian cooking, these large white beans have a meaty, creamy texture that imparts a flavor somewhat similar to smoked bacon. Marrow beans are ideal in baked dishes and salads and tasty when pureed in soups!

Substitutes: Navy or Great Northern beans.
Recommended Preparation Instructions:
Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring to a boil for 3 minutes, reduce heat and simmer, covered, for 60-90 minutes until tender. This bean produces foam, so skim the water regularly.
One cup dry yields 2¼ cups cooked.
