Marrow beans are a plump looking dried bean; they are similar in size and color to Great Northern and Cannellini beans. Common in Italian cooking, these large white beans have a meaty, creamy texture that imparts a flavor somewhat similar to smoked bacon. Marrow beans are ideal in baked dishes and salads and tasty when pureed in soups!

Marrow beans go well with braised meats, stews, soups, salads, and baked dishes. One cup dry yields 2 ¼ cups cooked.
Substitutes: Navy or Great Northern beans.
Recommended Preparation Instructions:
Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring to a boil for 3 minutes, reduce heat and simmer, covered, for 60-90 minutes until tender. This bean produces foam, so skim the water regularly.
One cup dry yields 2¼ cups cooked.
