FLORENTINE BEANS
  • 1 pound Beans
  • 2 cloves garlic, chopped
  • 1 teaspoon minced fresh sage
  • 2 cups Italian plum tomatoes
  • Salt and pepper to taste
  • Parmesan cheese to taste

Soak, rinse and cook beans; set aside. Heat oil in saucepan. When hot, add garlic and sage and cook, stirring frequently, until garlic begins to brown. Add beans, tomatoes, salt and pepper and cook for 30 minutes until quite thick. Remove from heat. Pour into serving bowl and sprinkle with Parmesan cheese, Serve hot.
