Highly esteemed and almost as valuable as their darker cousin the Black Truffle, White Truffles have a loyal following among food lovers. Growing symbiotically with oak, hazel, poplar, and beech trees, the White Truffle “fruits” in autumn. White Truffles can reach 12 cm diameter and their flesh is pale cream or brown with white marbling. The flavor of the White Truffle is fragrant with an earthy flavor. Specially trained dogs seek White Truffles out. The use of hogs has decreased through the years since there is less risk of the dogs ingesting the Truffle when found.
