BLACK BEAN AND WILD RICE SALAD
2 cups
Premium Dry Roasted Wild Rice
, cooked with
chicken seasoning
and cooled
2 cans Black Beans, drained and rinsed if preferred
1 Red Bell Pepper, chopped
4 Plum Tomatoes, chopped
1 can White Corn
1 bunch Green Onions, chopped
Dressing:
1 cup Olive Oil
1/2 cup Orange Juice
2 Tablespoons Chili Powder
2 Tablespoons Cumin
Chopped Cilantro to taste
Prepare rice as directed, add remaining ingredients and then toss with dressing.
