SOUTHWESTERN BEANS AND RICE
  • 1 cup Beans
  • ¾ cup each sliced carrots and sliced celery
  • ½ cup chopped onions
  • 1 jalapeño pepper, minced
  • 1 garlic clove, minced
  • 1/8 teaspoon ground red pepper
  • Ground black pepper to taste
  • 1 cup diced cooked ham
  • ½ cup each red and green peppers, cut in thin strips
  • 2 teaspoons vegetable oil
  • 3 cups hot cooked White Basmati Rice

Prepare beans according to cooking guidelines. In a large saucepan combine cooked beans, carrots, celery, onions, jalapeño pepper, garlic, ground red pepper and black pepper with 1 cup of water. Cover and simmer for 2½ hours, stirring occasionally. Add ham; simmer an additional 15 minutes. Cook red and green peppers in oil until tender crisp; stir into rice. Serve beans with rice. Makes 4 servings.
