Soak beans overnight then rinse. In 2 quart saucepan add uncooked rice, seasoning, water and rinsed beans. Bring to a boil, reduce heat and cook on simmer for approximately 45 to 50 minutes or until rice has blossomed and beans are tender (additional water may be needed).
Line warmed tortilla with lettuce, spoon rice and bean mixture onto lettuce. Top with choped onions, diced tomatoes, salsa and jalapenos (optional). Fold tortilla into roll, top with sour cream, garnish and serve.<
