BULGUR AND PEA PILAF 
  • 1½ cups Bulgur Wheat
  • 7 cups boiling water
  • 2 cups cooked fresh peas or beans (or cooked dried beans)
  • ½ cup chopped scallions
  • ¼ cup minced fresh cilantro
  • ½ cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon curry powder
  • ½ teaspoon ground cumin
  • ½ teaspoon ground turmeric

Dash cayenne

Salt to taste

Place bulgur wheat in a large heatproof bowl and cover with boiling water. Cover and allow to stand for 2½ hours.

Pour into a fine sieve and let drain for 30 minutes. Place in a mixing bowl and combine with the remaining ingredients. Let stand for about 30 minutes and serve at room temperature.
