Meat Processing Recipes

Specialty Burgers
• 100# Bison or lean Burger, ground
• 13# cooked Dry Roasted Wild Rice
• 5-12 oz Packages of Chieftain's Maple Apple Seasoning or Garlic Peppercorn Seasoning

Mix and shape into burgers.

Variations: Add onions, Jalapenos or Chipotle Powder to the burgers or stuff with blue cheese and wrap with Prosciutto or bacon.

Bratwurst Recipe #1
• 50# Seasoned bratwurst meat mixture, ground
• 3# Amber Blend, Premium Wild Rice, or Calico Blend, cooked and cooled

Blend all ingredients thoroughly and stuff into sausage casings. For a finer textured bratwurst, run through grinder for a brief grind before stuffing into casings.


Bratwurst Recipe #2
• 3# Amber Blend, Premium Wild Rice, or Calico Blend, cooked and cooled
• 35 - 50# chicken, turkey, beef or bison
• Seasoning of choice, try our Garlic Peppercorn, Chicken Flavor, Vegetarian or Maple Apple Seasoning

Option #1: Grind meat with seasoning then add rice and stuff into casings.
Option #2: Grind meat with seasoning then add rice. Do a limited 2 ½ minute coarse grind before stuffing into casings.

Shake it up a bit and try some of these additional products to add texture and flavor to your meat recipe!

For a smoky flavor add Chipotle Powder or Smoked Sweet Paprika!
